Sourdough discard cookies

Sourdough discard cookies are not just normal cookies with starter dumped in. Discard changes hydration, acidity, spread, and chew.

why this works

Starter adds flour and water, so the rest of the recipe has to compensate. Chilling matters because discard dough often spreads more than standard cookie dough.

method

  1. Use 80-120g discard for most 2-dozen cookie batches.
  2. Reduce other liquid slightly if the recipe has milk or cream.
  3. Chill the dough at least 1 hour before baking.
  4. Bake a test cookie first to check spread.
  5. Add 1-2 tablespoons flour if the test cookie runs too thin.
