method

  1. Mix and bulk ferment as usual.
  2. Divide into 4 equal pieces after bulk.
  3. Pre-shape gently and rest 15 minutes.
  4. Final shape into small rounds or batards.
  5. Cold proof 8-12 hours.
  6. Bake covered at 475°F for 14 minutes, then uncovered at 425°F for 12-16 minutes.
