Kids' cinnamon roll Saturday

An overnight enriched sourdough cinnamon roll dough — mix Friday night, roll and cut with kids Saturday morning, bake by 10 a.m.

Saturday morning cinnamon rolls became a ritual in our house the year my oldest could read a recipe. Mix the dough Friday after dinner, fridge overnight, and the kids roll + cut while I make coffee. By 10 a.m. the kitchen smells like a bakery and everyone is sticky.

Why this works

An enriched sourdough dough — butter, eggs, milk — is forgiving and soft. The overnight cold fermentation builds flavor and slows the proof so you don't have to start at 5 a.m. The cinnamon-sugar-butter filling is impossible to mess up. A cream cheese glaze ties it together.

Warm milk = active starter
If your starter is sluggish, warm the milk to 95°F before mixing. The enzymes wake up and the dough doubles reliably overnight in the fridge.

Can I make these without sourdough?

Sub 7 g instant yeast for the starter and reduce flour by 60 g + water by 40 g. The flavor won't be as deep but the texture will be similar.

Can I freeze unbaked rolls?

Yes — after cutting, freeze in the pan. The night before baking, move to the fridge to thaw, then proof + bake as written.
